There are so many fun things you can do with plastic Easter Eggs. I am unfortunately discovering this with only a day or 2 left before Easter comes and goes. We may just have to celebrate Easter all year long!
For this activity, I hid a penny inside one of the eggs. LM had to search through all the eggs to find which one held the coin. I tried to get him to pick up one egg at a time and shake it so he could listen for something inside. He did this sometimes, but mostly had fun opening all the eggs. We took turns hiding the penny and had a lot of fun!

I know what you mean! I have so many Easter activities saved on a list for next year. There's no way for me to get to them all before Easter.
Great idea to hide the penny. The Easter bunny always drops eggs on his way out of our house and maybe there could be a special prize for the person that finds the egg with the penny in it. I imagine that becominq quite competitive as the kids get older. =)
